The evening begins with a simple welcome of sourdough and cultured butter, followed by a vibrant heirloom tomato and sweet corn salad paired with 2025 Chardonnay. Ahi au poivre takes center stage alongside 2022 North Block, while 2021 and 2022 Cabernet Sauvignon accompany an elegant preparation of Joyce Farms Poulet Rouge with truffled breast, crispy thigh, eggplant mousseline, green beans, and porcini jus. Dessert brings the evening to a decadent close with Guayaquil chocolate pavé, blackberry, and vanilla cream, paired with 2021 Commitment.
