 complement and showcase the character of the featured wines\, from a bright
  California Chardonnay to a structured Cabernet Sauvignon and the rich\, la
 yered 2021 Commitment. The evening begins with a simple welcome of sourdoug
 h and cultured butter\, followed by a vibrant heirloom tomato and sweet cor
 n salad paired with 2025 Chardonnay. Ahi au poivre takes center stage along
 side 2022 North Block\, while 2021 and 2022 Cabernet Sauvignon accompany an
  elegant preparation of Joyce Farms Poulet Rouge with truffled breast\, cri
 spy thigh\, eggplant mousseline\, green beans\, and porcini jus. Dessert br
 ings the evening to a decadent close with Guayaquil chocolate pavé\, black
 berry\, and vanilla cream\, paired with 2021 Commitment. Located in Sonoma 
 County’s rugged Mayacamas Mountains\, Cornell Vineyards is deeply rooted 
 in its distinctive mountain terroir and a respect for the land. The estateâ
 €™s vineyards are carefully farmed to express the character of the site\, p
